Beans and Rice, Tempeh, and KALE!!!

My friend Valerie had made us dinner. She had told me that she was going to cook kale. This was the 2nd or 3rd time trying kale. The amount of excitement I had about that kale was unreal. I thought about it all day.

Now time out for a second.... I love desserts and junk food just like the rest of us, but I don't think I have ever thought about a chocolate chip cookie or chocolate cake with so much excitement I did for that kale. 
It's on a level with sushi. And like sushi the first one or two times I had it I wasn't convinced. But just like sushi it suddenly hit me~~~I’m in love. My favorite fruit is fresh black figs and my favorite vegetable is kale.... Good Lord! Give it a few tries!

Ok with that said I'll explain this meal. 
Beans and rice
tempeh cubed fried to warm it up, and give it a little crust and BBQ sauced.
Kale, wash and de-vane it and break up into pieces. Heat up a pan with little oil on med high fry up some onion and garlic and then throw in the kale.when it begins to visibly wilt flip it around a bit. Repeat this until it’s all evenly wilted. Once it's wilted stop cookin it. We don't want you eating any pale or gray veggies.
